For Valentines Day last week I had some single lady friends over for dinner and games, which seemed like a perfect excuse to make this Ruby Red Grapefruit cake featured on Food52. That and I had a grapefruit I needed to use. I subbed the lemon zest for lime zest, and mint for lime zest. Limes cover a multitude of sins in my lacking pantry.
I forgot just how much was in involved in baking a cake from scratch. Admittedly I've not baked something as involved as this cake felt in awhile, but for some pros out there this will be a piece of cake to make. (Bah dom cha!)
Why did this cake feel so involved you wander? Well. Three bowls. This is a three bowl cake. Dry, wet, stiff peaks. Four bowls if you count the cake pan, which is bowlish. Six, or even seven counting measuring cups, also cylindrical and bowl-like. But I digress.
Final thoughts on this cake are that this cake is sweet, but not too sugary. It is light and soft, but hold it's own. This is a good cake.
