Peas are having a moment in my kitchen. Same with anything smeared on toast. Having been in and out of my house, state and country recently, anything with the works "no-cook" equals a quick win for me. This chilled pea soup has 5 ingredients, depending on how you count.
The radish butter (on toast, naturally) is creamy and sweet because of the butter. Which cut through the tartness of the radish. Just about as complicated to make as the pea soup. Throw everything in food processor and go. Then spread on bread. The radish butter toast is great balance for the bright and clean tasting soup. Hooray for summer and for delicious, simple recipes!
