Have you ever had the mediterranean veggie sandwich at Panera? Well it comes on a tomato bread that I had a brief love affair with a few years ago. I would buy a loaf and have them slice it for my own sandwiches.
Since beginning to work with sourdough, I've had a thought to try and make my own tomato break with herb-y goodness. This weekend I did just that.
Following The Clever Carrot's basic sourdough recipe I adjusted it as follows:
- 1 heaping tablespoon of tomato paste, mix in the first dough mixing stage
- 1 tablespoon of italian seasoning, or any other herb mix, mix in the first dough mixing stage
- 2 tablespoons of sundried tomatoes, diced into small chunks, mix after autolase stage with the salt
That's it! It you find your dough a little wet while mixing add just a smidge more flour. It'd really delicious and adds a bit more depth to the sourdough. Give it a go!
