Being out of town during the last snowstorm, err blizzard, I am more than ready for this snow. A day full of snow fall makes me very content to stay inside and be cozy.
This morning I made delicious pancake-y, crepes-esque, blintzes-ish breakfast for me and my roommates. A friend posted the recipe on Facebook yesterday and it looked simple and peaked my interest since the recipe calls for cottage cheese. These are consisted protein packed pancakes because they're not as cakey. Trying out a new recipe and being unsure, I made them on the small side. I would recommend making them large, so they can hold more delicious fruit, jam, peanut butter, or whatever!
After breakfast another adventurous roommate and I went for a walk in the snow. My great plans for the day is to watch Chronicles of Narnia, sip hot tea and maybe make some snow cream.
- 1 cup cottage cheese
- 4 eggs
- 1/2 cup flour
- 1/4 tsp salt
- 1/4 cup oil
- 1/2 cup milk
- 1/2 tsp. vanilla
Mix all in blender and cook either on a griddle or a frying pan.
